Proper Pancakes for Little People – with a healthy twist!

Ahh one of our favourite days of the year here at Moon & Spoon! We will be celebrating
Pancake Tuesday with Pancakes for Breakfast, Lunch and Dinner… just kidding!! But we will
be treating ourselves to some healthy pancakes with some lovely fresh fruit and chocolate as
fillings! 
We love pancakes all year round. There are so many different variations that can be made,
and some creative ways to add extra fruit and fibre into your pancakes! If you have some
over ripe bananas hanging around that need to be used this recipe below is perfect!
Banana Oat Pancakes
Ingredients
125ml whole milk
2 eggs separated 
1 small over ripe banana (adds natural sweetness)
100g rolled oats
2 tsp baking powder
Drop vanilla extract 
Oil for cooking
Toppings of choice
Method
Put the milk, egg yolks, banana (broken into small pieces), oats, baking powder and vanilla
extract into a blender and blend until smooth. Whisk the egg whites until smooth in a
separate bowl and then fold into the other ingredients. 
Chocolate chips could be mixed into the batter to make chocolate chip pancakes! Otherwise
we love topping with some grated chocolate, fresh fruit and yoghurt!
